Upside-Down Pizza Casserole and More

I really do NOT like the "Witching Hour." ( ya know...What is for dinner..tonight??)

So, if I can make things ahead.. I am happy! Quite frankly, everyone else is happy, too. LOL!

Here are my kitchen helpers.


These are not necessary components but, I use them often. The Kitchen Pro and the Temp-tation Baker are available at http://www.qvc.com/. Next time, I am going to try pizza dough instead of biscuits.
The basic recipe came from the book pictured above. I changed it.. a bit.

Upside-Down Pizza Casserole

1.5 lb. lean ground beef
1 small onion diced
garlic diced
Olive oil
1 jar of spaghetti sauce
1.5 cups of shredded cheese
2 small cans of mushrooms pieces~drained (optional)
1 can of black olives ~drained and diced (optional)
1 10- oz pkg. of refrigerated biscuits

Heat a large skillet (I used a chicken fryer). Pour one round of olive oil. Let it get hot. Til it smokes a little. Add diced onion and garlic. Fry til transparent. Then add hamburg. Fry til hamburg is brown.Drain grease if you have it.I didn't have much.
Next, add mushrooms, olives, and spaghetti sauce. Let them mingle over the heat for a few minutes.
I used a ceramic baker. I did NOT grease it. No need. If your using another kind of pan,you may want to grease it.Pour mixture into baker.Cover and place in the fridge or freezer.

Remember,I am doing this in the am, before the "witching hour."

When it's time, Heat the oven to 400 degrees. Place casserole in the oven for 15minutes. Then add shredded cheese. Flatten biscuits in your hands. Place them on top of the cheese.Return casserole to the oven for 15 minutes. Bake until biscuits are golden brown.

If you are preparing and baking all at once, bake for 15 minutes.I added 15 minutes because it was in the refrigerator all day.




Today, I must fix Potsie's harness. He came to me with a guilty look on his face.I looked at him and noticed his harness was around his Gludieous Maximus (his butt). He chewed it off!! I really tried not to laugh...a mixed message, ya know. I told him he was "naughty boy" holding my breathe so, I would not laugh...The guilty look just cracks me up!
Come-On... We have "Breakfast with the Bassets" on Saturday!..He needs his harness.He needs to check the calender, before doing "naughty" things!
